These Chicken Fajita Potato Boats are loaded, cheesy, and full of flavor. Soft baked russet potatoes are filled with sizzling fajita chicken, colorful bell peppers, and onion, then topped with melted mozzarella and cheddar, a dollop of sour cream, and fresh cilantro. They are perfect for dinner or parties — hearty enough for a main dish, fun enough for a crowd.
I love this one because it turns simple baked potatoes into something everyone gets excited about. The shells stay sturdy, the filling is smoky and juicy, and the second bake makes the cheese golden and bubbly.
Why You’ll Love This Recipe:
- Loaded, cheesy, and full of fajita flavor in every bite
- Perfect for dinner or parties, and easy to scale up
- Colorful peppers and melted cheese make it a crowd-pleaser
- Make-ahead friendly: bake the potatoes and cook the filling in advance
Instructions:
- Bake the potatoes: scrub 4 large russet potatoes, prick with a fork, and bake at 400°F (200°C) for 50 to 60 minutes, until soft all the way through. Cool slightly, cut each potato in half lengthwise, and scoop out some of the insides, leaving a sturdy shell.
- Cook the fajita filling: heat 2 tbsp oil in a large skillet over medium-high heat. Cook the sliced chicken with the sliced bell peppers, sliced onion, 2 tsp fajita seasoning, 1/2 tsp garlic powder, 1/2 tsp paprika, and chili flakes if using, until the chicken is fully cooked and the peppers are just tender. Season with salt and pepper and stir in 1 tbsp lime juice.
- Fill the potato halves generously with the chicken fajita mixture.
- Top each boat with mozzarella and cheddar cheese.
- Bake again at 400°F (200°C) for 10 to 15 minutes, until the cheese is melted and bubbly.
- Add sour cream, sprinkle with fresh cilantro, and enjoy!
Tips & Variations:
- Do not scoop the potatoes too thin, or the boats will collapse — leave about 1/4 inch of potato around the shell
- Save the scooped potato for mashed potatoes or potato soup
- For extra heat, add sliced jalapeños or a pinch more chili flakes
- Swap sour cream for Greek yogurt, or add guacamole and salsa on the side
Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat in the oven at 375°F (190°C) until hot and the cheese is melted again.
