Forget the red sauce for a night — these enchiladas are wrapped in a rich, creamy white sauce that soaks into every tortilla and turns golden and bubbly in the oven. Tender shredded chicken, melted Monterey Jack, and a tangy sour cream sauce make this the coziest pan of enchiladas you will ever pull out of the oven. This is the dish I make when I want guaranteed clean plates. It assembles in minutes from rotisserie chicken and pantry staples, and it is the kind of dinner that has everyone asking when I am making it again. Why You’ll Love This Recipe: A rich, tangy sour cream sauce instead of the usual red — creamy, not heavy; Tender shredded chicken and gooey Monterey Jack in every roll; Assembles fast from rotisserie chicken and pantry staples; Bakes into a golden, bubbly pan that feeds the whole family. Ingredients: For the enchiladas: 3 cups cooked chicken, shredded; 10 flour tortillas (fajita size); 2 cups shredded Monterey Jack cheese, divided; 1 can (4 oz) diced green chiles, drained; 1 tsp cumin; 1/2 tsp garlic powder; Salt & pepper to taste. For the creamy sauce: 2 tbsp butter; 2 tbsp all-purpose flour; 1 1/2 cups chicken broth; 1 cup sour cream; 1 can (4 oz) diced green chiles, drained; 1/2 tsp garlic powder; Salt & pepper to taste; Fresh cilantro and sliced green onions, for garnish. Instructions: 1. Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish. 2. In a bowl, mix the shredded chicken with 1 1/2 cups of the Monterey Jack, the green chiles, cumin, and garlic powder. Season with salt and pepper. 3. Warm the tortillas briefly in the microwave (covered, 30 seconds) so they roll without cracking. Spoon chicken filling down the center of each, roll up snugly, and place seam-side down in the dish. 4. For the sauce, melt the butter in a saucepan over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the chicken broth until smooth, then simmer 3 to 4 minutes until slightly thickened. 5. Remove from the heat and whisk in the sour cream, green chiles, and garlic powder until smooth. Season with salt and pepper. (Do not boil the sauce after adding sour cream or it may curdle.) 6. Pour the sauce over the enchiladas and sprinkle with the remaining Monterey Jack. Bake uncovered for 20 to 25 minutes, until bubbly and lightly golden. Garnish with cilantro and green onions and serve. Tips & Variations: Warming the tortillas first is the key step — cold tortillas crack when rolled. Add a can of drained black beans to the filling to stretch it for a bigger crowd. For a little heat, add a diced jalapeño to the filling or a pinch of cayenne to the sauce. Storage: Cover and refrigerate for up to 4 days. Reheat covered in a 350°F oven for 15 to 20 minutes, or microwave a single serving for 2 minutes.
