A mountain of crunchy tortilla chips, crispy chicken pieces, and melted cheese, piled high with all the good toppings — these nachos are built for sharing, though nobody will blame you for keeping the plate close. Every chip gets something: chicken, cheese, a little salsa, a cool dollop of sour cream. I make these for game day and casual Friday nights because they turn a regular evening into an event. The trick is layering — cheese and chicken between the chips, not just on top — so the last chip is just as loaded as the first.
Why You’ll Love This Recipe:
Layered, not just topped, so every chip is loaded;
Crispy chicken, gooey cheese, and fresh toppings in every bite;
Ready in about 30 minutes and endlessly customizable;
The ultimate shareable plate for game day and movie night.
Ingredients:
For the nachos: 1 bag (13 oz) sturdy tortilla chips; 2 cups crispy chicken pieces (popcorn chicken, chicken strips cut up, or breaded chicken bites); 2 cups shredded Mexican-blend cheese; 1 can (15 oz) black beans, drained and rinsed; 1 cup pico de gallo or diced tomatoes; 1/2 red onion, finely diced; 1 jalapeño, sliced (optional). For topping: 1/2 cup sour cream; 1/2 cup guacamole; 1/4 cup sliced black olives (optional); 1/4 cup chopped fresh cilantro; 1 lime, cut into wedges.
Instructions:
1. Preheat your oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
2. Spread half the tortilla chips in a single layer on the sheet. Top with half the crispy chicken, half the cheese, and half the black beans.
3. Add the remaining chips in a second layer, then the rest of the chicken, cheese, and beans.
4. Bake for 10 to 12 minutes, until the cheese is fully melted and bubbly.
5. Top immediately with pico de gallo, red onion, jalapeño, olives, and cilantro. Add dollops of sour cream and guacamole.
6. Serve right away with lime wedges for squeezing over the top.
Tips & Variations:
Use two baking sheets instead of piling too high — overcrowded nachos steam instead of crisping. Swap the chicken for seasoned ground beef or shredded pork if you prefer. Keep wet toppings (sour cream, guacamole) off until serving so the chips stay crunchy.
Storage:
Nachos are best eaten fresh and do not reheat well. If you must save them, refrigerate the cheese-and-chicken portion (without fresh toppings) for up to 2 days and re-crisp in a 375°F oven for 8 minutes.
